Here are some desserts (2 non-cook) and a biscuit recipe that are high-protein and low-carb.
Chunky Peanut Butter Biscuits
3 scoops vanilla protein powder
½ cup almond meal
½ cup Splenda / drops Stevia to taste.
½ tsp baking powder
Dash salt
1/6 cup melted butter
¼ cup natural peanut butter
1 tsp vanilla essence
2 eggs
½ cup chopped unsalted peanuts
Mix all ingredients together.
Mix will be more of a batter than dough.
Drop by teaspoons onto greased cookie sheet.
Bake at 180 C for 8 minutes.
Coconut Chocolate Dessert
1 cup cocoa powder
1 cup of sweetener
1 cup coconut oil
6 eggs
Separate egg whites from yolks.
Whisk 6 egg whites to stiff peaks.
Whisk 6 egg yolks.
Gently fold the whisked egg yolk, cocoa powder, sweetener and coconut oil into egg white and pour into a lined tin.
Chill until set.
Cinnamon Cream
100g low fat ricotta cheese
Dash of cinnamon
Dash of vanilla essence
1-2 tsp Splenda / drops Stevia to taste
Mix together.
Eat.
Vanilla and Spice Hot Cakes
1 cup reduced-fat ricotta cheese
2 tbsp physillium husk (obtainable from good food & health shops)
1 tsp baking powder
1 tsp vanilla essence
4 eggs
1 tsp cinnamon
1 tsp nutmeg
2 tbsp water
Pre-heat oven to 160 C.
Whisk eggs until white and fluffy.
Combine ricotta, vanilla, sweetener, cinnamon, baking powder, physillium husk in a bowl.
Spoon mixture into a lightly greased muffin tin.
Bake for 30 minutes or until set.
Eat as is or chill in fridge.
